Healthy Chocolate Chip Cookies
1/2 cup coconut oil
3/4 cup coconut sugar
1 egg
1 tbsp vanilla
1 1/2 cups whole wheat flour
2 tsp baking powder
1/2 cup dark chocolate chips
Preheat the oven to 350 degrees F. Whisk together coconut oil with coconut sugar. Add egg and vanilla and mix together. Mix in the remaining ingredients except for the chocolate chips. Fold in chocolate chips. Roll into balls with your hands - balls will be oily but cookie come out not oily. Place balls of cookie dough on lined baking sheet and bake for about 12-13 minutes or until golden brown.
