Sweet Potato Brownie
Ingredients :
2 1/2 cups sweet potatoes (peeled, cut into cubes then steamed)
2 eggs
1/2 cup coconut oil
1/3 cup maple syrup
1 teaspoon vanilla extract
1/2 cup cocoa powder
2 tablespoons coconut flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
Process
1. Preheat oven to 350 and set aside an 8x8" square pan. Lined with parchment paper and greased.
2. In a large food processor, blend together sweet potato and all wet ingredients.
3. In a medium- large mixing bowl, combine all dry ingredients
4. Add dry batter to the wet mixture in the food processor and process until smooth.
5. Add batter to baking pan and smooth over with a fork.
6. Bake 20-25 minutes and let cool.
7. Top with melted dark chocolate chips and whipped cream or ice cream
